Southern Season Blackberry Jam

Despite the prickly thorns of its canes, blackberries are one of the most welcomed fruits of the summer in the South. In roadside ditches and forest edges across the region we make note of their white flowers in late spring in anticipation of later berries. When they do arrive, however, their stay is all too brief due to being swarmed by hungry birds and passionate pie makers. But now that craving for the taste of summer blackberries can be satisfied even in the dead of winter.
